Mini Smashed Potato Pizzas are not just a tasty treat but also a fantastic way to involve kids in the kitchen! Once the base is ready, kids can help with the fun part—customizing their own mini pizzas! Let them spread pizza sauce, sprinkle shredded mozzarella cheese, and add mini pepperoni slices to their liking. You can even set up a toppings bar with optional ingredients like Parmesan, red pepper flakes, and extra Italian seasoning, allowing each child to create their own unique pizza.

Ingredients
Instructions
Preheat oven to 425°F.
In a pot, boil potatoes until fork-tender, about 10 minutes.
Once potatoes are cooked, place them on a baking sheet and make an X-incision on the top of each potato.
Using a drinking glass, firmly press down each potato with the bottom of the glass until each potato is 3/8" thick.
Lightly mist the top of potatoes with cooking spray and season with salt & pepper, to taste.
Bake for 10-15 minutes or until desired crispness.
Layer potatoes with pizza sauce, mozzarella, pepperoni, and a dash of Italian seasoning.
Return potato pizzas to the oven for an additional 5 minutes.
Add more flavor with parmesan and red pepper flakes, if desired.
