Make stock: Boil the chicken carcass with onion, parsnips, carrots, turnips, and herbs to make a soup stock. Add leftover chicken and noodles for a delicious soup.
Make a pot pie: Line small ramekins with premade pie crust. Mix chopped rotisserie chicken, cream of chicken soup, and thawed mixed vegetables. Spoon the mixture into the crust, top with another crust round, and poke vent holes. Bake until the crust is golden and the filling is hot for a delicious chicken pot pie.
Rotisserie chicken can be used as the filling: for enchiladas, fajitas, and tacos. Simply season with a packet of taco seasoning or make your own blend from a combination of paprika, chili powder, and cumin.
Make chicken salad for sandwiches: Pulse rotisserie chicken with celery, dill, and mayonnaise (or Greek yogurt/ ranch dressing) in a food processor. Add crumbled bacon and serve the chicken salad on toasted whole wheat bread.

Make a casserole: chicken chunks can be added to any of your favorite casserole recipes in lieu of fresh chicken.
Make mac-and-cheese Chicken: mix in shredded rotisserie chicken.
Make a chicken stir-fry: mix hot rotisserie chicken, Asian vegetables, and seasonings. Serve over glass rice noodles.
