Creamy Chicken Pearl Couscous Soup

Prepare pearl couscous according to package directions.
In a large pot, heat butter over medium heat. Add onion, carrots, and celery. Cook 5 minutes until softened. Stir in garlic and cook 1 minute.
Slowly stir in chicken broth, then add Italian seasoning, salt, and pepper. Bring to a boil, then reduce the heat to a simmer for 10 minutes.
Stir in chicken, milk, and pearl couscous. Simmer 5 minutes until hot. Garnish with parsley.
For creamier soup, stir in heavy cream just before serving.

- 1 teaspoon pepper
- 3 cups cooked, shredded chicken
- 1 cup milk
- 1 tablespoon parsley, chopped
- 1 tablespoon heavy cream (optional)
