You Can Do It: Watermelon Treats

July is National Watermelon Month, so what better time to celebrate the ultimate summer fruit? Whether you're crafting a refreshing watermelon pizza topped with your favorite fruits or diving into a sweet-and-salty fruit salad with cottage cheese and mint, these recipes are bound to become seasonal staples. Healthy enough for breakfast, festive enough for a summer gathering, and undeniably delicious—your biggest challenge will be deciding which to make first!


Sweet Watermelon Pizza

Yields: Servings will vary

Ingredients
  • 1 Watermelon round, cut into 1" (for crust)
  • Varied amount of shredded coconut
  • Varied amount Greek yogurt of choice
  • Varied amount Mint
  • Varied amount of Berries of choice (blueberries, strawberries, blackberries)
  • Varied amount slivered almonds


Instructions

  1. Spread yogurt to cover watermelon leaving room to hold the rind.
  2. Sprinkle watermelon pizza with coconut, mint, berries and almond toppings as desired.


  3. Watermelon Berry Fruit Salad with Cottage Cheese

    Yields: Servings will vary



    Ingredients
    • Watermelon
    • 1 Package Each: raspberries, strawberries, blueberries, blackberries
    • 1 Container Cottage Cheese
    • 1 Bunch Mint Leaves
    • Honey, to taste




    Instructions:

     
    1. Cut watermelon with star-shaped cookie cutter or into cubes.
    2. Mixed with remaining fruit in large bowl, or individual servings. Add dollops of cream cheese on top of fruit.
    3. Garnish with mint leaves and drizzle with honey (optional) prior to serving.
